About your Instructor


Hi... my name is Elli and I am from the Turquoise Squirrel Patisserie based in South Africa. I love making cakes, I love making extraordinary cakes... I love making extraordinary cakes and edible art.

And I would absolutely LOVE it if I could teach you too!

My passion is creating sugar flowers, in my opinion they finish off a cake design, and make it so much more unique. In this class I would love to teach you my Sugar Moth Orchids, and how to arrange them in a beautiful design with a planter included. This is what you're in for:


This course is over 11 hours of in-depth video content, with my best tips and tricks I have learned over the years, and they will be yours to keep.




What you will learn: 


  • How to make realistic, delicate and intricate moth orchids from Gumpaste, including cutting, shaping, colouring and assembly. (You will learn 2 different colour options, but you can take the knowledge and apply it to many other orchids and sugar flowers)
  • How to make matching foliage and Buds 
  • How to assemble all of this into a realistic arrangement 
  • How to make a Vase/ Planter for these orchids, including an amazing array of techniques such as:
  • my own original Kintsugi & Bas-relief combination made from fondant
  • working with textured fondant
  • painting the design
  • assembly (all demonstrated on a dummy cake, but what is necessary for a real cake is discussed, so the techniques can be transferred onto real cake)

On top of that you will get in depth insights into my design process, and why I chose to arrange/ place things the way I do, and a whole bunch of little tips and tricks that I have found useful over the years.
